Homemade pizza from scratch is genuinely easy and far better than delivery. The dough needs an hour to prove, but the hands-on time is tiny.

Ingredients
- 300g strong white bread flour, plus extra
- 1 teaspoon fast-action yeast
- 1 teaspoon salt
- 1 tablespoon olive oil
- 200ml warm water
- 150g passata
- 1 garlic clove, crushed
- 1 teaspoon dried oregano
- 1 ball mozzarella, torn
- Handful of basil
Method
- Mix the flour, yeast and salt in a bowl. Add the oil and water and bring together into a dough.
- Knead on a floured surface for 8 to 10 minutes until smooth and springy. Put in an oiled bowl, cover and leave to rise for about 1 hour until doubled.
- Heat the oven as high as it will go and put a baking tray in to get hot.
- Mix the passata with the garlic and oregano and season.
- Knock the air out of the dough, split in two and roll each piece out thinly on floured baking paper.
- Spread with the sauce, leaving a border, and scatter over the mozzarella.
- Slide onto the hot tray and bake for 8 to 10 minutes until the base is crisp and the cheese is bubbling. Finish with fresh basil.
