Macaroni cheese

Ultimate comfort food: pasta in a proper cheese sauce, baked until bubbling with a crisp top. A roux sounds fancy but takes five minutes.

Ingredients
- 300g macaroni
- 50g butter
- 50g plain flour
- 600ml milk
- 1 teaspoon Dijon mustard
- 200g mature cheddar, grated
- Salt and pepper
- 2 tablespoons breadcrumbs
Method
- Cook the macaroni in salted water for 2 minutes less than the packet says, then drain. Heat the oven to 200C/180C fan.
- Melt the butter in a pan, stir in the flour and cook for a minute to make a paste.
- Gradually whisk in the milk, a little at a time, until smooth. Cook, stirring, for 3 to 4 minutes until thickened.
- Take off the heat and stir in the mustard and most of the cheese until melted. Season well.
- Fold in the macaroni, tip into a baking dish and top with the remaining cheese and the breadcrumbs.
- Bake for 20 minutes until golden and bubbling.
