The ultimate cheap comfort supper. A crisp-skinned baked potato loaded with beans and melting cheese — barely a recipe, but done well it's hard to beat.

  1. Heat the oven to 220C/200C fan. Prick the potatoes all over with a fork.
  2. Rub with oil and a little salt and put straight on the oven shelf. Bake for 1 hour to 1 hour 15 minutes, until the skin is crisp and a knife slides easily into the middle.
  3. Near the end, warm the beans in a small pan.
  4. Split the potatoes open, push in a knob of butter and fluff the insides with a fork.
  5. Spoon over the beans, pile on the cheese so it melts, and finish with black pepper.
