The ultimate cheap comfort supper. A crisp-skinned baked potato loaded with beans and melting cheese — barely a recipe, but done well it's hard to beat.

Ingredients
- 2 large baking potatoes
- 1 tablespoon oil
- Salt
- 400g tin baked beans
- 80g cheddar, grated
- Knob of butter
- Black pepper
Method
- Heat the oven to 220C/200C fan. Prick the potatoes all over with a fork.
- Rub with oil and a little salt and put straight on the oven shelf. Bake for 1 hour to 1 hour 15 minutes, until the skin is crisp and a knife slides easily into the middle.
- Near the end, warm the beans in a small pan.
- Split the potatoes open, push in a knob of butter and fluff the insides with a fork.
- Spoon over the beans, pile on the cheese so it melts, and finish with black pepper.
