Homemade hummus

Smoother, fresher and cheaper than shop-bought, from one tin of chickpeas. The secret to a silky texture is plenty of lemon and a splash of cold water while you blend.

Ingredients
- 400g tin chickpeas, drained (save a little liquid)
- 2 tablespoons tahini
- 1 garlic clove
- Juice of 1 lemon
- 3 tablespoons olive oil, plus extra to serve
- 1/2 teaspoon ground cumin
- Salt
- 2 to 3 tablespoons cold water
- Pinch of paprika, to serve
Method
- Put the chickpeas, tahini, garlic, lemon juice, olive oil, cumin and a good pinch of salt in a blender or food processor.
- Blend, adding the cold water a spoonful at a time, until completely smooth and light. Taste and add more lemon or salt if needed.
- Spoon into a bowl, make a swirl with the back of the spoon and finish with a drizzle of oil and a pinch of paprika. Serve with warm flatbread or veg sticks.
