  1. Gently mix the mince with the salt and pepper, then shape into 4 loose patties slightly wider than your buns. Press a dimple in the centre of each so they cook flat.
  2. Heat the oil in a frying pan over a high heat until very hot.
  3. Cook the burgers for 3 to 4 minutes on one side without moving them, until a deep crust forms.
  4. Flip, add a slice of cheese if using, and cook for another 3 to 4 minutes for medium.
  5. Rest for a minute while you toast the buns. Build with your favourite salad and sauces.
