Classic beef burger

A proper homemade burger beats any drive-through. Handle the mince lightly, season generously and don't press it in the pan — that's the whole game.

Ingredients
- 500g beef mince (ideally 15 to 20% fat)
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon oil
- 4 burger buns
- 4 slices cheese (optional)
- Lettuce, tomato, onion and sauces, to serve
Method
- Gently mix the mince with the salt and pepper, then shape into 4 loose patties slightly wider than your buns. Press a dimple in the centre of each so they cook flat.
- Heat the oil in a frying pan over a high heat until very hot.
- Cook the burgers for 3 to 4 minutes on one side without moving them, until a deep crust forms.
- Flip, add a slice of cheese if using, and cook for another 3 to 4 minutes for medium.
- Rest for a minute while you toast the buns. Build with your favourite salad and sauces.
