The One-Pan Full English Traybake

All the glory of a proper Full English without juggling four pans. Sausages, bacon, mushrooms, tomatoes and beans roast together in one tray while the eggs bake in little wells at the end. Toast, butter, brown sauce, done.

Ingredients
- 4 good pork sausages
- 4 rashers smoked back bacon
- 150g chestnut mushrooms, halved
- 2 medium tomatoes, halved
- 1 tbsp sunflower or vegetable oil
- 1 tsp Worcestershire sauce
- 1 x 400g tin baked beans
- 2 large eggs
- 2 black pudding slices (optional)
- Salt and freshly ground black pepper
- 4 slices thick white bread, to serve
- Butter, to serve
- Brown sauce or ketchup, to serve
Method
- Heat the oven to 220C/200C fan/gas 7. Put the sausages in a large roasting tray with the oil, toss to coat and roast for 15 minutes, turning once.
- Push the sausages to one side. Add the mushrooms and tomatoes (cut side up) to the tray, season them well and drizzle the Worcestershire sauce over the mushrooms. Roast for 10 minutes.
- Drape the bacon rashers over a clear patch of the tray, add the black pudding if using, and roast for a further 8 minutes until the bacon is crisp at the edges.
- Warm the beans in a small pan or microwave. Pour them into a heatproof ramekin or foil-lined corner of the tray, or keep separate if you like your beans contained.
- Make two gaps in the tray, crack an egg into each and return to the oven for 4-5 minutes, until the whites are just set and the yolks still runny. Meanwhile, toast and butter the bread.
- Season the eggs, divide everything between two warm plates and serve at once with the toast and plenty of brown sauce.
