Smoky, nutty and packed with heat, these West African suya skewers are street food at its finest. A bold peanut-spice rub coats tender strips of sirloin that char beautifully over high heat — perfect for sharing with cold drinks and a punchy fresh salad.

Method

  1. Soak 8 wooden skewers in cold water for at least 20 minutes to prevent burning.
  2. In a bowl, mix together the groundnut powder, smoked paprika, cayenne, ginger, garlic powder, onion powder, cinnamon, bouillon powder and salt to make the suya spice blend.
  3. Add the vegetable oil to the spice blend and stir to a thick paste. Add the beef strips and toss well so every piece is thoroughly coated. Leave to marinate for at least 15 minutes at room temperature.
  4. Thread the marinated beef strips onto the soaked skewers, weaving them on so they lie flat.
  5. Heat a grill pan, barbecue or outdoor grill to very high heat. Grill the skewers for 3–4 minutes per side until nicely charred and cooked through.
  6. Rest the skewers for 2 minutes, then serve on a board with sliced red onion, tomato, shredded cabbage and lemon wedges alongside.
