A beloved Nigerian delicacy, Nkwobi is fall-off-the-bone tender cow foot cloaked in a rich, warmly spiced palm oil and ugba sauce. Deeply satisfying and packed with bold flavour, it's the ultimate crowd-pleasing sharing dish for celebrations and lively gatherings.

Method

  1. Place the cow foot pieces in a large pot. Cover with water and bring to a boil. Skim off any foam, then add the stock cube, salt, ground ehuru, and ground uziza seeds.
  2. Cover and simmer over medium-low heat for 2 to 2.5 hours, until the cow foot is very tender and gelatinous. Top up with water as needed. When done, reduce the liquid until only about 100 ml of concentrated stock remains in the pot. Set aside.
  3. Meanwhile, rinse the ugba in warm water and drain well.
  4. Gently melt the palm oil in a separate wide pan over very low heat — do not fry or overheat it, just liquefy it so it stays bright orange.
  5. Remove the pan from the heat. Stir in the ground crayfish, blended scotch bonnet, and ground utazi leaf into the palm oil. Mix well.
  6. Add the cooked cow foot and the reserved concentrated stock into the palm oil mixture. Stir to coat every piece thoroughly.
  7. Add the ugba and stir again gently. Taste and adjust salt as needed.
  8. Return the pan to very low heat for 2–3 minutes, stirring, just until everything is warmed through and well combined — do not boil or the palm oil will separate.
  9. Transfer to a serving dish. Garnish with sliced red onion and fresh shredded utazi leaves. Serve immediately as a starter or sharing dish, traditionally without any swallow.
