Lemon & Thyme Roast Chicken with Honeyed Root Vegetables

A proper Sunday centrepiece: a golden, lemon-scented chicken roasted over carrots, parsnips and potatoes that soak up every drop of buttery juice. One tin, minimal fuss, maximum crackle of crisp skin.

Ingredients
- 1 whole chicken, about 1.6-1.8kg
- 50g softened butter
- 1 lemon, halved
- 4 sprigs fresh thyme, plus 1 tsp leaves
- 3 garlic cloves, lightly crushed
- 600g potatoes (Maris Piper or similar), cut into 4cm chunks
- 3 carrots, cut into thick batons
- 2 parsnips, cut into thick batons
- 1 red onion, cut into wedges
- 2 tbsp olive oil
- 1 tbsp runny honey
- 1 tsp flaky sea salt, plus more for seasoning
- Freshly ground black pepper
- 150ml chicken stock or water
Method
- Heat the oven to 200C fan / 220C conventional / 425F. Take the chicken out of the fridge 20 minutes before cooking and pat it very dry with kitchen paper.
- Mash the butter with the thyme leaves, a good pinch of salt and plenty of pepper. Loosen the skin over the breast with your fingers and push two-thirds of the butter underneath; smear the rest over the outside.
- Squeeze a little juice from one lemon half over the bird, then push both halves, the thyme sprigs and the garlic into the cavity. Season the skin generously with flaky salt.
- Toss the potatoes, carrots, parsnips and onion in a large roasting tin with the olive oil, salt and pepper. Spread into an even layer and sit the chicken directly on top.
- Roast for 30 minutes, then pour the stock into the tin (around, not over, the chicken) and turn the vegetables in the juices. Roast for a further 45-55 minutes, basting once, until the skin is deep golden and the juices from the thickest part of the thigh run clear (75C / 165F on a thermometer).
- Lift the chicken onto a board, cover loosely with foil and rest for 15 minutes.
- Meanwhile, drizzle the honey over the vegetables, stir, and return the tin to the oven for 10-12 minutes until sticky and caramelised at the edges.
- Carve the chicken and serve with the vegetables, spooning the pan juices over everything.
- Cook's tip: for a quick gravy, tip the pan juices into a small pan, whisk in 1 tsp cornflour slaked in cold water and simmer for 2 minutes.
