Method

  1. Heat the oil in a large deep pan over medium heat. Add the onion and cook for 8–10 minutes, stirring often, until soft and golden.
  2. Add the garlic and ginger and cook for 1 minute until fragrant.
  3. Stir in the tomatoes and cook for 5 minutes, mashing them down gently, until they break down into a thick paste.
  4. Add the cumin, coriander, turmeric, smoked paprika and cayenne. Stir well and cook the spices for 2 minutes.
  5. Add the drained kidney beans and stir to coat them in the spiced tomato base.
  6. Pour in the coconut milk and water. Stir, bring to a gentle simmer, then reduce the heat to low.
  7. Simmer uncovered for 20 minutes, stirring occasionally, until the sauce thickens and the beans are very tender. Add a splash more water if it gets too thick.
  8. Season with salt, then squeeze in the lime juice. Taste and adjust seasoning.
  9. Scatter over fresh coriander and serve hot with steamed rice or warm chapati.
