Layers of shatteringly crisp filo wrapped around a generous filling of wilted spinach, salty feta, spring onion and dill. It slices beautifully warm or at room temperature, and tastes even better the next day with a tomato salad.

Method

  1. Heat oven to 190C/170C fan. Brush a 30x20cm baking dish with olive oil.
  2. Heat 1 tbsp olive oil in a large pan and soften the onion for 6-8 minutes, then add spring onions and garlic for 1 minute more.
  3. Add the fresh spinach in handfuls, wilting each batch. Tip into a colander and press hard with a spoon to squeeze out as much liquid as possible; cool slightly, then chop roughly. (If using frozen, just squeeze dry and add to the onions.)
  4. In a bowl mix the spinach with feta, ricotta, eggs, dill, mint, lemon zest, pepper and nutmeg. Taste and add salt only if needed - feta is salty.
  5. Lay a sheet of filo in the dish, letting the edges overhang, and brush with olive oil. Repeat with 5-6 sheets, angling them so the base and sides are covered.
  6. Spoon in the filling and level it out. Fold the overhanging filo back over the top.
  7. Brush and layer the remaining filo sheets on top, scrunching them slightly for texture. Brush generously with oil and scatter over sesame seeds.
  8. Score the top into 6 portions with a sharp knife, then bake for 45-50 minutes until deep golden and crisp.
  9. Rest for 10 minutes before cutting - this lets the filling set. Serve warm or at room temperature.
