Golden, caramelised sweet plantain slices paired with perfectly fried eggs — this is West African comfort food at its finest. Ready in under 20 minutes, it's the kind of simple, satisfying meal that feels like a warm hug on a plate.

Ingredients
- 2 ripe plantains (skins mostly black or heavily spotted yellow)
- 4 large eggs
- 4 tbsp vegetable oil (divided)
- ½ tsp salt
- ¼ tsp black pepper
- ¼ tsp chilli flakes (optional)
- Small handful of fresh parsley or spring onion, chopped (to garnish)
Method
- Peel the plantains and cut them on a slight diagonal into 1 cm thick slices.
- Heat 3 tbsp of vegetable oil in a large non-stick frying pan over medium-high heat until shimmering.
- Add the plantain slices in a single layer (work in batches if needed). Fry for 2–3 minutes per side until deep golden and caramelised. Remove with a slotted spoon and drain on kitchen paper. Sprinkle lightly with salt.
- Reduce the heat to medium and add the remaining 1 tbsp oil to the same pan.
- Crack the eggs into the pan, season with salt, black pepper, and chilli flakes if using. Fry for 2–3 minutes until the whites are set but the yolks are still runny, or cook to your liking.
- Arrange the dodo on two plates, place two fried eggs alongside each portion, and garnish with chopped parsley or spring onion. Serve immediately.
