Golden, airy, and packed with flavour, these West African black-eyed pea fritters are a beloved street food classic. Soaked beans are blended smooth, whipped to a light batter, and fried until perfectly crispy outside and fluffy within — irresistible as a snack, appetiser, or breakfast alongside hot porridge.

Ingredients
- 400g dried black-eyed peas
- 1 small onion, roughly chopped
- 1 scotch bonnet chilli, deseeded (adjust to taste)
- 1 tsp fine sea salt
- ½ tsp ground white pepper
- ½ tsp smoked paprika
- 2 tbsp cold water (plus more if needed)
- Vegetable oil, for deep frying
Method
- Place the dried black-eyed peas in a large bowl and cover with cold water. Soak for at least 2 hours or overnight. To speed things up, soak in warm water for 30 minutes then rub the beans vigorously between your palms to loosen and remove the skins. Drain, then rinse until most skins have floated away.
- Transfer the peeled, soaked beans to a blender or food processor. Add the chopped onion, scotch bonnet, salt, white pepper, smoked paprika, and 2 tablespoons of cold water. Blend to a thick, smooth paste — it should resemble hummus. Add a tiny splash more water only if the blender struggles, keeping the batter as thick as possible.
- Transfer the batter to a large bowl. Using a wooden spoon or electric hand mixer, beat the batter vigorously for 3–4 minutes until it lightens in colour and becomes slightly airy. This step is key to fluffy fritters — do not skip it.
- Pour vegetable oil into a deep saucepan to a depth of about 6cm. Heat over medium-high heat to 175°C (use a thermometer or test with a small drop of batter — it should sizzle and rise immediately).
- Using two wet tablespoons, scoop and drop rounded portions of batter (about 2 tablespoons each) into the hot oil. Fry in batches of 5–6 to avoid crowding. Cook for 3–4 minutes, turning once, until deep golden brown on all sides.
- Remove with a slotted spoon and drain on a plate lined with kitchen paper. Repeat with the remaining batter, keeping the oil temperature steady between batches.
- Serve immediately while crispy, with a dipping sauce of your choice — tomato pepper sauce, spiced yoghurt, or simply a wedge of lime.
