Bobotie is South Africa's beloved national dish — a warmly spiced, savoury mince bake topped with a silky egg custard, served alongside fragrant turmeric yellow rice. It's comforting, exotic, and utterly addictive. Think of it as a Cape Malay hug in a baking dish.

  1. Preheat your oven to 180°C (fan 160°C). Soak the bread slices in the 200ml milk for 10 minutes, then squeeze out excess milk and reserve the milk. Mash the bread to a paste and set both aside.
  2. Heat the oil in a large frying pan over medium heat. Sauté the onions for 8–10 minutes until soft and golden. Add the garlic and cook for 1 more minute.
  3. Add the curry powder, turmeric, cumin, coriander, and cinnamon to the onions. Stir and cook for 2 minutes until fragrant.
  4. Add the mince to the pan and brown thoroughly, breaking up any lumps, about 8–10 minutes.
  5. Stir in the mashed bread, reserved milk, apricot jam, mango chutney, Worcestershire sauce, red wine vinegar, raisins, and almonds. Season generously with salt and pepper. Mix well and cook for 5 minutes.
  6. Spoon the mince mixture into a deep, buttered ovenproof dish (approx 30x20cm). Press it down firmly and smooth the top. Tuck the bay leaves into the surface at angles.
  7. Whisk together the 3 eggs and 200ml milk for the custard topping, season lightly with salt, then gently pour it over the mince layer.
  8. Bake for 35–40 minutes until the custard is set and lightly golden on top.
  9. Meanwhile, make the yellow rice: place the rice, turmeric, sugar, raisins, salt, and butter into a saucepan with 800ml cold water. Bring to the boil, stir once, then cover tightly and cook on the lowest heat for 12 minutes. Remove from heat and leave covered for 5 minutes, then fluff with a fork.
  10. Remove the bobotie from the oven and rest for 5 minutes. Remove bay leaves before serving. Spoon generously alongside the yellow rice and enjoy!
