Nothing beats the smell of boerewors sizzling over hot coals. These iconic South African rolls are loaded with juicy, spiced sausage and crowned with a tangy, slow-cooked tomato relish that's utterly addictive. Perfect for firing up the braai with friends on a warm afternoon.

  1. Make the relish: Heat the oil in a small saucepan over medium heat. Add the onion and cook for 6–8 minutes until soft and golden. Add the garlic and cook for 1 minute more.
  2. Stir in the tomato paste, smoked paprika and chilli flakes and cook for 1 minute. Pour in the chopped tomatoes, Worcestershire sauce and sugar. Season well with salt and pepper.
  3. Simmer the relish uncovered for 15–20 minutes, stirring occasionally, until thickened and rich. Taste and adjust seasoning. Keep warm.
  4. Meanwhile, prepare your braai or grill to medium-high heat. If using a braai, allow the coals to turn grey before cooking.
  5. Lay the boerewors on the grill. Cook for 10–12 minutes, turning every 2–3 minutes, until nicely charred on the outside and cooked through with no pink remaining inside.
  6. Lightly toast the cut sides of the rolls on the grill for 1–2 minutes until golden.
  7. Place a portion of boerewors into each roll, spoon a generous amount of tomato relish over the top, scatter with fresh parsley and add a squirt of mustard if desired. Serve immediately.
