The world's fastest dessert, done properly: a scoop of cold vanilla gelato drowned in a shot of scalding espresso, finished with buttery amaretti rubble and a whisper of orange zest. Hot, cold, bitter, sweet — all in five minutes.

Ingredients
- 4 generous scoops good vanilla gelato or ice cream (about 300g)
- 4 shots freshly pulled espresso (about 120ml), very hot
- 4 crisp amaretti biscuits (about 40g)
- 1 tbsp toasted flaked almonds
- 2 tsp amaretto or dark rum (optional)
- Finely grated zest of 1/2 orange
- Pinch of flaky sea salt
Method
- Put two small glasses or coupe bowls in the freezer for 10 minutes so the gelato holds its shape.
- Crush the amaretti in a bag with a rolling pin until you have a mix of coarse rubble and fine crumb. Toss with the flaked almonds and a tiny pinch of flaky salt.
- Scoop 2 balls of gelato into each chilled glass and return to the freezer while you make the coffee.
- Pull the espresso fresh and hot. If using, stir the amaretto or rum into the coffee.
- Bring the glasses to the table, scatter over the amaretti crumb and orange zest, then pour a hot double espresso over each at the table so everyone hears the sizzle. Eat immediately, spoon in hand.
